Telluride Two: Tommy Boy Trail

We met a man on the first trail we took who told us about a second trail.  And since he described it as "Knarly", Mark needed to try it out. 
 

 
We stopped near the entrance to the old mine, and Evan was INCREDIBLY excited about all the cool rocks he found! (He's totally a rock hound!)


He was OVER THE MOON when we found a geode.   I could barely get him to put it down so he could eat lunch!

Telluride

Our Jeep Adventure for the long weekend took us through Telluride Colorado.
 
And of course, we couldn't just drive through!!

Well, at least that's where the snow stopped us.


 
But, considering that the town is down there somewhere too small to see... I think we made it far enough!

Random Sight

Evan and I went to a movie yesterday  (he's the only one I live with that had any interest in seeing the new Star Trek... I've obviously raised him right).
 
And while we were driving home, we noticed cars braking and pulling over to the side of the road by the airport. 


 
It was just preparing to take off, so we pulled over and watched it lumber slowly down the taxiway... and then turn, and launch itself down the runway.  It circled back over all of the spectators, tipped it's wings and flew off into the clouds.
 
When we got home, Ryan told us all about it too, as it had done a low pass over the house. 
 
I have no idea what it was doing... I can't seem to find a news story about the plane, or why it was down in our area... I'm sure it was part of an Armed Forces Day celebration somewhere, but it's story is a mystery.

Oh.My.Dessert.

I know that Greek Yogurt is not for EVERYONE... but... TRUST me on this one.
Freeze them. 
 
They are better than ice cream.
 
Oh, the Raspberry Chocolate is also amazing.
 
I haven't tried the others, because, well... I tried the raspberry first, then got stuck on the coffee...
 
Oh.
 
And the best part?
 
100 calories of yummy creamy goodness.
 
And zero fat.
 
And considering the amount of protein... one is incredibly filling and delicious.

Banana Bread Waffles.

Okay, so according to Hallmark and TV commercials, today I'm suppose to be served breakfast in bed.
 
But I like to cook.  And try new recipes. 
 
So I cooked this morning...

And, since it's MY day, I of course tweaked the recipe.  Because that's what I do.  (Click on the link below the picture for the recipe, which I'm sure is amazing.)
 
 
I subbed out the oil in the recipe for an extra banana, added an extra splash of vanilla and made the cinnamon and nutmeg HEAPING spoonfuls.  AND we don't eat walnuts in our house... so pecans were the pitch-hitters. 
 
We just had syrup, but I think some candied pecans would be amazing... or if you want to go completely nuts, some chocolate sauce and whipped cream. 
 
But just as they were, they were great!!

Alaskan Springtime... wait, what is spring?

 
 
In all the years I spent in my childhood home... I don't think I ever experienced "Spring".
 
There was Winter and Break-up and that warm season we called Summer.  Oh, and "The Dead of Winter" that was more like a long night, that was the 4th season.
 
I think those in the Lower 48 would call "Break-Up" "Spring", but really... it's not... because instead of tulips, there is just mud. What we called "Summer" was more like the spring I've experienced since we moved... but how depressing would it be if we didn't have SUMMER growing up??

Our Life Right Now...

 Is full of ...
 
 
 
As soon as homework is done in the evening, he's out in the backyard practicing.
His best friend comes to play, and they are practicing.
Saturday morning... and it's game day, and that's all he can focus on!

His second game was on Saturday, and they won again! 

I love their coach, even if his overly relaxed approach makes me crazy as the refs are blowing whistles and the other team is lined up, and he's taking his time... and if you know me, I hate hate being late... it makes me crazy! But, his being relaxed is something the kids pick up on, and there is no pressure and they want to do a good job and can't wait to play.

So, as much as I have resisted, I'm so happy we enrolled Evan this year!!

Carrot Raisin Muffins

Have you ever been to Mimi's CafĂ©?  They have the best carrot raisin muffins.  There other food is good too, but the muffins are all you need.

I've always wanted to make them... and since I had some carrots that needed to be used, I went on a hunt for a copy cat recipe this weekend... and I found one that seemed close enough to the concept that I only tweaked it a little.

Next time, I'm going to need to try the buttermilk spice...


1 cup granulated sugar
¼ cup butter
 ¼ cup plus a little extra drizzle of DARK molasses, no substitutes!
½ cup plus 1 TBSP vegetable oil
3 eggs
2 TBSP Greek yogurt
 1 tsp. vanilla extract
1 cup whole wheat flour
 1 ½ cups all-purpose flour
2 tsp. baking soda
½ tsp. salt
1 ½ cup shredded carrots
1 ½ cup raisins
½ cup chopped pecans

Preheat oven to 350, and prepare muffin tins by either spraying with oil or lining with paper cups.  Cream the sugar and butter until fluffy.  Add the molasses, oil, eggs, vanilla and yogurt, mix until smooth.   Mix in the dry ingredients and stir until just incorporated.  Fold in the carrots, raisins and pecans.  Fill muffin cups about 1/2 (2/3 if you like big muffin tops... I don't), and bake for 20-25 mins (until a toothpick comes out clean). 

Best warm with a cup of tea or coffee... but just as good the next day (if there are any left).  The recipe made 24 small muffins... but probably a few less if you fill your cups higher!

Sunday Drive

 
One of my favorite things about where we live is being just a few miles from the mountains.  
 
 It's great to be able to hop in the vehicle and be up out of the city within just 20 mins.  And now with the Jeep, one of the favorite actives is to do just that. 
 
Last weekend, we went up Millcreek Canyon and Big Cottonwood Canyon...
 
 It was perfect up Millcreek, just slightly cooler than the 75 degree valley and the boys were VERY jealous of all the other visitors who had thought it out enough to bring a picnic!  I told them that we would for SURE do that next trip. 
 
Big Cottonwood though was still full of snow... and only in the 40s!  A little too chilly for our shorts and t-shirts!  The boys thought the little town of Brighton at the top of Big Cottonwood would be "THE COOLEST PLACE TO LIVE!" especially when they saw some of the cabins still buried to their roof tops in snow!
