First Game!

Evan had a BLAST!  His team did really well.  After about 10 mins, they found their groove, and the rest of the game was played with them on offence for the majority of the time!  Evan took a turn as goalie for a stretch, and saw the ball once, lol. 
 
 
My camera battery was dead, so I only had my phone... which is a bit slow, but that's Evan running in the lead for the ball.  He did great covering his position and charging after the ball, and after the game, the coach praised him and used him as an example to the rest of the kids. 
 
 
His coach is great, and never negative... unlike some of them coaches I've seen, and I'm so grateful for that!

Rainy Day turns Golden

Evan was INCREDIBLY excited for Saturday to come.  It was his FIRST soccer game!

And then it rained all night.
 
We got the text about 10am saying the field was too wet to play.
 
So, we decided to take a Jeep Adventure instead!!   Golden Spike National Park is just a few hours away... so off we went. 
 
We arrived in just in time for the Engine House tour!  When you walk in the door, it's hard not to stop in your tracks when you see the beautiful engines. 


It was too early in the year for the locomotives to be out running, but they were polishing them up for their big day in May. 
 
 
 
Ryan was so excited to be right there with the "Steamies", and Evan (who takes after his mother) LOVED the history and was really impressed with the Ranger's description of the different jobs. 


 
The whole ride back, Ryan just kept talking about how we are going to go back so that he can see the Steamies when they get to come out of their house, and how the Ranger told him he could climb up inside. 
 
Over all, it ended up being a great day, even if the games were rained out!

Baby Evan

During our ride this weekend, Ryan started calling Evan his "Baby".  And insisted that his "baby" needed to snuggle him.  

It was a good 20 mins of giggling, laughing and squealing.

I LOVE that my boys get along so well!

Fresh

I have no idea what else to call this meal.


When my parents were spending time with my boys last weekend, Mark and I went out to dinner.

We shared a version of this along side a yummy wild mushroom flat bread pizza.

And we both had to resist the urge to lick the plate clean.

I can't wait to make it with FRESH tomatoes that are still warm from the sun!

mmmmMMMMmmmm... My mouth is already watering.

(And my mind is trying hard to forget the forecast is calling for snow tonight and tomorrow.)

The concept is simple, and, if you make your own vinaigrette, the recipe is only slightly more difficult.

It's simply a thick slice of tomato topped with a slice of mozzarella, wrapped in prosciutto, drizzled with a mustard vinaigrette and sprinkled with basil.

Done.  

For my drizzle tonight, I used a dash of garlic powder (because I didn't have a clove), a pinch of basil, about 1 t of a good brown mustard (Dijon would work just as well) and about 2 t of balsamic vinegar, and 4-5 t of olive oil.  Just shake it all up and drizzle over the wrapped yumminess.

Or any mustard vinaigrette recipe you find would probably work just fine... you only need a few tablespoons of it.

Or you could just put the balsamic on them.

Or buy a yummy vinegar based dressing.

No matter, make these. You won't be sorry!

So, there is this Hole...

Yep.  

We drove for hours to see a hole.   

And, being in the jeep with THREE boys (yes, that includes Mark) discussing the HOLE we were going to see did lead to many many BOY jokes.  

I'm sure you can imagine.

I know, I know... I could have just let Ryan have free reign in the yard with a shovel... but I just don't think it would have been the same as THIS:

Oh, and if you've never heard the story of the Hole in the Rock... In October of 1879, 200+ Mormon Pioneers were sent to settle the Four Corners area, and since I-70 didn't exist yet, they had to forge their own trail through the desert.  Along the way, they ran into the gorge formed by the Colorado as it cut through the sandstone.  The found themselves 1000 feet above the riverbank... 1000 feet of sheer red rock cliffs had to be conquered before they could cross the river.   So, with limited blasting supplies, pick axes and shovels, they cut a hole in the rock that was just barely wider than their covered wagons, and held on for dear life. 

 *Hmmm... Shadows in Slick Rock make for nice fake orange tans!


This last picture, I took while standing on the very edge of the slick rock on the right side of the the Hole, holding my camera up over my head and out over the ledge... see my shadow??  And those loose rocks down in the center?  That's where we are sitting in the pictures above.  It is STEEP!

Double Digits

Evan is TEN. 

When did he get this big??

He has spent the weekend with his Grandparents having a BLAST for spring break.  They got back yesterday, just in time for his birthday dinner.

He chose to go to his favorite restaurant... Iggy's.

AND his Uncle Chris made SURE the servers knew he was the birthday boy!

He covered his face with a napkin while they sang, lol.

BUT he did think the free birthday sundae was worth indulging in.

And since Grandpa was sitting right next to him  ...

 

 He consented to a small bite.
